About the Recipe
A delicious, comforting French dish, Tomates Farcies are stuffed tomatoes with a savory sausage filling, often served with rice.

Ingredients
4 large tomatoes (or 8 small ones)
500 g sausage meat
3 onions
2 garlic cloves
Fresh parsley

Preparation
Method
Step 1: Prepare the Vegetables
Peel and finely chop the onions and garlic.
Step 2: Make the Filling
Add half of the chopped onions to the sausage meat.
Add the garlic, salt, pepper, and some chopped parsley. Mix well to combine.
Step 3: Prepare the Tomatoes
Cut off the tops of the tomatoes and carefully hollow them out.
Season the inside with salt and pepper.
Stuff the hollowed tomatoes with the sausage mixture and replace the tops.
Step 4: Prepare the Baking Dish
Place the remaining onions and the tomato flesh in a baking dish.
Step 5: Bake the Stuffed Tomatoes
Arrange the stuffed tomatoes in the dish.
Sprinkle some thyme over them and place a small knob of butter on top of each tomato.
Bake in a preheated oven at 180°C (thermostat 6) for about 1 hour or until the tomatoes are tender and the filling is cooked through.
Step 6: Serve
Serve the Tomates Farcies with rice for a complete and satisfying meal.
