This timeless French dessert is a luxurious blend of creamy custard and a crisp, caramelised sugar topping. Whether served plain or with subtle flavours like orange blossom or zesty lemon, crème brûlée is a delightful treat that elevates any meal.

Ingredients
egg yolks
66.5 g caster sugar (+ 1 tsp for the topping, preferably brown sugar)
13.5 cl whole milk
0.25 l pouring cream (heavy cream)
Vanilla (1 sachet of vanilla sugar or a splash of liquid vanilla)
Optional flavourings: lemon zest, a hint of anise, or orange blossom water
Preparation
Method
Prepare the Mixture:
In a mixing bowl, whisk together the milk, cream, and egg yolks until smooth. Add the sugar and vanilla, or your chosen flavouring, and mix well.
Fill the Ramekins:
Divide the mixture evenly between four small ramekins.
Bake:
Preheat your oven to 120°C (thermostat 4). Place the ramekins in a deep baking dish and fill the dish with hot water to create a water bath. Bake for 35 to 40 minutes until the custards are just set but still slightly wobbly in the center.
Caramelise the Topping:
Sprinkle the remaining sugar evenly over the surface of each custard. Use a kitchen torch to melt and caramelise the sugar, or place the ramekins under a hot grill until the sugar turns golden and crisp.
Serve:
Allow the caramelised sugar to cool for a minute or two before serving.
Tip: For a twist, add a touch of orange blossom water or a hint of lemon zest to the custard for a unique flavour variation. Serve chilled and enjoy the delightful contrast of creamy custard and crackling caramel!
