Moules Marinières Persillées is a delightful French seafood dish featuring fresh mussels cooked in white wine, butter, and aromatic herbs. This quick and flavorful recipe is perfect for an elegant appetizer or a light main course served with crusty bread or fries.

Ingredients
2 kg mussels, cleaned
2 onions, finely sliced
1 branch celery, diced
0.5 bunch parsley, roughly chopped
20 g butter
25 cl dry white wine

Method
Prepare the Ingredients:
Clean the mussels thoroughly, discarding any that are cracked or do not close when tapped. Finely slice the onions and dice the celery.
Sauté the Vegetables:
In a large pot, melt the butter over medium heat. Add the onions and celery, stirring frequently, and cook for about 5 minutes until softened.
Cook the Mussels:
Add the cleaned mussels to the pot, followed by the white wine. Stir well to combine.
Add the Parsley:
Remove the parsley leaves from the stems, chop roughly, and add them to the pot. Cover with a lid and cook over medium heat for 10 minutes, shaking the pot occasionally to ensure even cooking.
Serve:
Once the mussels are open, they are ready to serve. Discard any mussels that remain closed after cooking.
