1 l of organic whole milk
4 organic egg yolks + 2 whole organic eggs
200 g powdered sugar
100 g cornstarch
20 cl of whole liquid cream
1 vanilla bean
For the sweet pastry
180 g butter + 5 g for the mould
250 g flour + 1 tbsp .
1 egg (large)
30 g of sugar
1 pinch of salt
Preparation
Step 1
Prepare the flan dough. In the bowl of a food processor fitted with a paddle attachment or in a large bowl, mix the flour with the butter. Add the egg, sugar, salt and mix until you obtain a smooth dough.
Step 2
Form a ball and place it in the refrigerator while you prepare the flan mixture.
Step 3
Preheat the oven to 180°C (gas mark 6).
Step 4
Prepare the flan mixture. In a large saucepan, bring the milk to the boil with the scraped vanilla pod, split in two, and 50 g of sugar.
Step 5
In a large bowl, whisk the egg yolks and eggs with the remaining sugar and cornstarch until the mixture turns pale.
Step 6
Pour in the hot milk while stirring constantly, then pour in the liquid cream.
Step 7
Pour everything back into the saucepan over low heat and whisk constantly until the cream thickens and begins to boil. Leave to cool off the heat.
Step 8
Meanwhile, roll out the dough on a floured work surface and place it in the buttered mould.
Step 9
Pour the flan mixture and smooth the surface. Bake for 50 minutes: the flan should be nicely coloured.
Step 10
Let cool and place in the refrigerator for at least 6 hours/overnight.
