This upside-down caramelised apple tart is a French classic with a delightful twist. Originating from a happy accident, tarte Tatin has become a beloved dessert, perfect for any occasion. With its buttery caramel, tender apples, and flaky pastry, this treat will leave your guests asking for seconds!

Ingredients
100 g caster sugar
100 g butter
1 puff pastry sheet (store-bought or homemade)
8 golden apples (peeled and halved)
2 sachets vanilla sugar or a splash of vanilla extract
Cinnamon (to taste)

Method
Preheat the Oven:
Preheat your oven to 180°C (fan-forced).
Prepare the Caramel:
Place a round, non-stick tart pan directly on the stovetop over medium heat. Melt the butter in the pan, then stir in the caster sugar. Lower the heat and cook until the sugar forms a golden caramel.
Prepare the Apples:
Peel the apples, slice them in half, and remove the cores while keeping the halves intact.
Arrange the Apples:
Place the halved apples into the pan in a circular pattern, rounded side down. Add one or two halves in the center to fill any gaps. Gently press the apples with a spatula occasionally to help them poach in the caramel. Ensure the caramel stays golden, not dark brown.
Add Flavour:
Sprinkle the apples with vanilla sugar (or a few drops of vanilla extract) and cinnamon.
Add the Pastry:
Remove the pan from the heat and carefully cover the apples with the puff pastry, tucking the edges snugly around the apples.
Bake:
Place the pan in the oven and bake for 35 to 40 minutes until the pastry is golden and flaky.
Serve:
Let the tarte cool slightly before turning it out onto a serving plate. Enjoy warm for the best experience!
