A classic dish from the French Alps, tartiflette is the ultimate winter comfort food. Made with creamy cheese, golden potatoes, and smoky bacon, this hearty dish is perfect for sharing with friends and family. Ingredients


  • 1 kg potatoes

  • 200 g sliced onions

  • 200 g smoked bacon pieces (lardons)

  • 1 reblochon cheese or 1 Castello White (brie or camembert alternative)

  • 1 garlic clove

  • 2 tablespoons oil

  • Salt and pepper

  1. Prepare the Potatoes:

    Peel the potatoes, cut them into cubes, rinse well, and pat them dry with a clean tea towel.


  2. Cook the Onions:

    Heat the oil in a frying pan and sauté the onions until softened.


  3. Add the Potatoes:

    Stir the potatoes into the onions and cook until golden on all sides.


  4. Cook the Bacon:

    Once the potatoes are browned, add the smoked bacon pieces and cook through. Blot any excess fat with a paper towel.


  5. Prepare the Cheese:

    Scrape the rind of the reblochon cheese and cut it in half or quarters, depending on its size.


  6. Prepare the Baking Dish:

    Preheat your oven to 200°C (fan-forced). Rub the base and sides of a baking dish with the peeled garlic clove.


  7. Assemble the Dish:

    Layer half the potato and bacon mixture into the dish, top with half the cheese, then add the remaining potatoes. Finish with the remaining cheese, rind side down against the potatoes.


  8. Bake

    Place the dish in the oven and bake for about 20 minutes, until golden and bubbling.


Serve hot with a crisp green salad or crusty bread for a truly indulgent meal!
